Ingredients
• 6 large eggs
• ¼ cup mayo
• 1 tsp yellow mustard (or Dijon)
• 1–2 tsp Green Chili Jam (start with 1 tsp, add more if you want it stronger)
• Salt + black pepper
Optional toppings
• Paprika
• Chopped bacon
• Chives/green onion
• Tiny extra GCJ dot on top (🔥)
Instructions
1. Boil eggs
• Put eggs in a pot, cover with water
• Bring to a boil
• Turn off heat, cover, let sit 10–12 min
• Drain and put in ice water 5 min
2. Peel + slice
• Peel eggs
• Slice in half lengthwise
• Pop yolks into a bowl
3. Mix filling
Mash yolks with:
• mayo
• mustard
• Green Chili Jam
• salt + pepper
Mix until smooth.
4. Fill eggs
• Spoon or pipe filling back into whites
5. Top
• Paprika or bacon/chives
• Optional: tiny GCJ dot on each egg for shine
