Preheat the oven to 325°F. Place bacon slices in a bowl and coat with green chili jam. Thick cut bacon is ideal, but any cut will work. For a little variety, try it with pepper bacon.
Cover baking sheet with parchment paper or foil and arrange the bacon in a single layer on top. Feel free to slather some more Green Chili Jam on there before putting it in the oven.
Place the tray on the center oven rack and bake for 20-30 minutes, or until golden brown and crispy on the edges.
